One of my favorite recipes on campouts is cabbage/bacon pitas. They are a
favorite with our Old Goat patrol.
Just brown bacon until crisp, cut the cabbage into shreds about 1/4" wide,
pour off all except about 2-3 tsp of the bacon grease, add the cabbage and
stir fry until just tender. Add coarse pepper. Fill whole wheat pitas
with the mixture, top with Ranch dressing and chopped green onions. Yum!
Another favorite pita filling is chicken salad. Just boil a chicken with
salt, pepper, garlic and a coarsly chopped onion until tender. Take off
meat and cut or pull into chunks. Chill meat in ice chest. Cut lettuce up
as for salad. Cut tomatos into wedges. Combine all with Miracle Whip and
salt. Very good for hot weather. We serve with cold cantaloupe, honeydew
and green grapes.
