I have had a Whisperlite for about 5 years now which still works great. I
have also tried a couple of stands but found them quite lacking. If you
have a flat spot to put a stand on, then the stove alone is fine. If the
ground is uneven, then the platforms don't work at all well. As to
simmering, John's suggestions are all great. I also carry a diffuser plate.
This is just a round piece of metal with circular corrugation that sits on
the stove and diffuses the flame and heat. Its like cooking over a solid
plate burner rather than a gas flame. With it in place, I can simmer
without burning and bake biscuits and such. Cost about $5.00 at REI. Worth
every penny. Me and stove have been all over the Sierra's together and we
did Philmont in 97. Never burned a thing since I got the diffuser.
