Best bet - go to your local health food or Chinese food store. They
sell dehydrated tofu. I've found rehydrated tofu to be a bit chewier
than fresh, but it's a pleasant chewiness.
You can also purchase powdered tofu at many health food stores. If you
need more protein in your meals, you can add a bit of powdered tofu to
many recipes. However, I haven't found many tasty recipes that use
powdered tofu as a base ingredient.
