We have a lactose intolerant boy in our troop. I did Cooking MB with him
last year, and we had to take some precautions like making pudding with soy
or rice milk. When I do this badge, I tell the boys I'll make them anything
they want for Sunday breakfast and they once chose Western Omelets. We used
the rice milk for omelets, and they were the fluffiest I've ever made!
Maybe it's the bulk from the rice that traps air in the beaten egg, but I
now keep a carton of rice milk in our fridge at home just for omelets. And
it's not bad in pancakes either.
