Seems to me that you need to get more even cooking to happen. Have you
tried making the batter a little more runny? If it is more runny, the
pancake speads more. Also, pour batter in a spiral motion so that the
first batter to hit the pan is in the center. Also, don't flip too soon,
wait for the bubbles to stop rising (steam) and then flip. If you do it
right, and have just enough oil in the pan, at the point you loosen the
pancake so you can flip it without the spatula, it should be ready.
Since you need to practice cooking, practice flipping!!!
