Lunch Menu suggestions?

Our troop will be going on the first TENT campout for the
new scouts in the troop this weekend and I would like to
do something for the adults' lunch meal to show them there's
more to camp cooking than macaroni and cheese, grilled
cheese, peanut butter and jelly, hamburgers and hot dogs.
I can probably get one of the dutch ovens cleaned up from
the scouts use of the night before ;-) or I'd like to try
something in a cardboard box oven. Anyone care to make
suggestions for something not too expensive but more
appealing and tasty? I guess roast rack of lamb would be
too much, sigh... (and I'm not so great a cook as to
attempt something like beef wellington or steak diane!) ;-)
How about a goulash or roast chicken or gumbo? Could I do
pineapple-upside down cake in a box oven along with a meat
