The margarine or butter is primarily to give the powdered cheese flavoring a
slippery feel, so the noodles slide and you don't choke. You can use
vegetable oil and 'butter buds', which are butter flavoring granules sold in
little foil packets. Margarine is basically vegetable oil and flavoring.
It is also very stable and doesn't really go rancid very fast. It can sit
for weeks at room temperature, and it loses consistency, but it doesn't go
bad. You can put the margarine in a bottle or zip-lock so it doesn't run
when it melts.
Of course, you can use powdered milk.
