If you are doing a cooking demonstration I believe it would be best to
demo all three types of cooking if possible. You could either compare
or contrast the methods cooking the same thing 3 ways or showing what
works best with each method.
This would also very much depend on the availability of good dry wood for
the open fire demo and the local and camp restrictions regarding the open
fire and use of firewood.
If you want to stick to a Civil War Theme open flame would most likely
be the best way to go. I believe during the War coal was strictly
rationed for more important uses than cooking.
I know it works better but for a demo I would stay away from the
pre-soaked charcoal. It really literally "stinks" and puts out some
nasty fumes when it is started.
