As a Jewish Scouter I have on occasion been asked to lead the blessing before
meals. I would expect everyone to follow their own customs as far as head
covering is concerned. If however you were visiting an orthodox or
conservative synagogue or if you were attending jewish services at camp you
would be expected to cover your head. In the orthodox tradition the head is
kept covered as a constant reminder of the presence of G-d. Conservative
practice is the same although the tendency is to cover the head only when
praying or eating. The type of head covering is not important.
