Johnnie Verbeck's "SPEC"

Johnnie Verbeck "was a dealer in sausages and sauerkraut and spec." What is
"spec," someone asked. This will be easy, I thought; I'll just check my
dictionary. Several later, and increasing in size, I found it!
"Speck" is 1) fat meat, especially bacon or pork; 2) the fat or blubber of a
whale, and 3) the fat of a hippopotamus.
The first recorded use was in Heywood's "English Travels" (1633): "Adue good
Cheese and Oynons, stuffe thy guts With Specke and Barley-pudding for
