I am sure you will get a more exact answer but
our recent eagle cooks all the time on a DO
(I want to play with it the next time I
can get our hands on it) but what he did
with the pineabpple upside down cake is to put it
on a bed of charcoals, put 10 on the top (roughly
covering it) and checked it after 10 minutes, then
every 3-5 minutes.
It was done in 15 minutes (the box said 35 minutes)
so it is really an art of watching it carefully.
I am sure there will be a post with "the amount
of time a hand is held over the fire counting from 10
and counting backward 10-9-8-7-6-5-4 ouch
means it is a 400 degrees." I have not experimented with
this but the knowledge with this crew is there.
