Florida Sea Base Tips

Hi folks -
Just a quick second request for tips to make our upcoming adventure at the
Florida Sea Base as exciting and comfortable as possible.
I got one nice referral to the Pennekamp State Park as a place to camp on
the way. We'll probably be staying at commercial lodging on our way from
Miam airport (crammed 4 to a room) to cut down on the type of gear we have
to haul across the country from California.
Our group is going Coral Reef sailing. Anyone done this before? Any tips
to offer that don't come out in the regular materials? Perhaps tips on
ways to help ease the close quarters on the boat, diversions such as games
or merit badge activities. (I've figured we'd work on Astronomy and
Fishing for sure.) How was the food? (At Philmont we learned to bring a
bottle of Tabasco or similar to liven up the freeze dried food.) Sun
exposure seems to be a potential problem - any suggestions on keeping young
